The Mojito originated from Havana in the late 19th century and gained popularity in the 1930’s. It’s made of mint, cane sugar, and rum; similar to a Mint Julep.

- mint leaves
- several lime wedges
- 2 teaspoons cane sugar
- 2 measures rum
- soda water
- mint sprig
- crushed ice

Highball Glassmethod
- muddle mint leaves, lime wedges and cane sugar in a highball glass
- fill with crushed ice and rum
- stir and top up with soda water to taste
- decorate with mint sprig
